Irish Soda Bread

Ingredients
3 1/2 cups all purpose flour
1/2 tsp salt
3/4 tsp baking soda
1 1/2 cups buttermilk
Directions
  1. Preheat oven to 450° F.
  2. In a large bowl, sift together the flour, salt and baking soda.
  3. Make a well in the center.
  4. Pour in the buttermilk.
  5. Using your hands, mix in the flour from the sides of the bowl.
  6. The dough should be soft, but not wet and sticky.
  7. If the dough is too dry or crumbly, add 1 to 2 more tablespoons of buttermilk.
  8. Turn out the dough onto a well-floured work surface.
  9. Wash and dry your hands.
  10. Knead lightly for a few seconds.
  11. Form the dough into a round ball.
  12. Place on a greased baking sheet.
  13. Sprinkle the top with flour.
  14. Use a sharp knife to cut a deep cross into the top-center of the dough.
  15. Bake for 15 minutes.
  16. Reduce the oven temperature to 400° F.
  17. Bake for 30 more minutes, or until the top is golden-brown and the bottom sounds hollow when tapped.
  18. Let bread cool for 15 minutes.
  19. Serve warm.
